So how do I set the correct input level?

I watched pretty much every video on that topic from Jason Sadites, but then I came across this video from Ghost Notes Audio: https://www.youtube.com/watch?v=gJ59h7xfvdI

Now I'm even more confused. What's the correct approach? How do you guys do it? Do you leave the input level on your interface at 0 or do you dial it in like any other signal and then reduce it with a gain plugin or the level input slider in the software in order to reduce the noise?
And how do you make sure your preset sounds the same when you use it on the pedal?

I've always set my USB interface gain to maximize my signal while making sure no matter how hard I strum I never clip. It only made sense to me to both maximize signal-to-noise, and take advantage of the full dynamic range of the A/Ds that I paid for in the USB interface.

I found a single interface gain setting that works well across all the guitars I use. Then in AmpliTube I can adjust the input slider if needed, although to date, I have just left that at the 0 default, and I adjust the amp/pedal controls. I'm not trying to replicate settings on real-world amps and I have been able to dial in the sounds I want without cutting or boosting the input gain.
